ASK ANY SERB WHICH IS THE FRUIT OF HIS NATION. WIT=" HOUT ANY HESITATION THEY WILL ANSWER: A PLUM. SMALL COUNTRY OF SERBIA USED TO BE THE FIRST IN THE WORLD BY NUMBER OF PLUM TREES. NOW SERBIA IS BEHIND THE USA AND CHINA. THERE ARE ABOUT 43 MILLION OF PLUMTREES NOWADAYS IN SERBIA. ONLY TWENTY YEARS AGO THERE WERE ABOUT 60 MILLION, AND IN XIX CENTURY EVEN MORE.

As a tradition, 99% plum-trees grow on private property, on small villagc households. Every Serbian house should havc at least several plum-trees, because children like to cat plums green or ripc, women cook tasty CODmjpOotcS, Drescrves, jams, and dried plum is very go0d for stomach.

HOW TO PREPARE PROYA (PROJA):

Sour cabbage rolls (Sarma)

Ingredients: sour cabbage, 5 or 6 onions, 750 g of mixed minced pork and beef, salt, pepper, parsley etc, teacup of rice, few pieces of bacon, laurel leaves, red pepper powder

The sour cabbage leaves are washed and separated and the thick parts removed.

You cut 5 or 6 onion bulbs into small pieces, fry them in a pan and then add 750 gr. of mixed minced pork and beef, frying the mixture for next 10 minutes. ,

You add salt, pepper, mixture of spices for cabbage rolls and a teacup of rice.

You put the prepared mixture with a coffee spoon into each leaf of cabbage, rolling it tightly.

The cabbage rolls are put in a casserole, with pieces of bacon or smoked pork meet between them. You add some laurel leaves and red pepper powder and cover the rolls with water.

After 20 minutes of cooking on the stove, on moderate temperature, you put the casserole in the preheated oven (200'C) and cook them for another two hours. ~
